All Ingredients easy to buy in your local market, very economical price, simply to make it.
Here are the Ingredients :
1. Butternut squash (peeled) = 400 gram.
2. Onion = 1
3. Small carrot = 1
4. Salted butter = 30 gram
5. Vegetable stock cube = 1
6. Water = 400 ml
7. Bay leaves = 2
8. Milk = 200ml
To make garnish as follow:
1. Single cream = a little
2. Chopped fresh herbs (such as chives or oregano) = a little as necessary.
Used this Direction:
- Slice the onion and carrot thinly. Melt the butter in a large saucepan, add the onion and carrot and then fry them on a low heat until they soften (about 15 to 20 minutes - they must not brown).
- Peel the butternut squash quite generously and dice it into small cubes. Add to the saucepan with the water, the stock cube and the bay leaves and simmer for 20 minutes with a lid on or until the vegetable are tender.
- Take the bay leaves out and add the milk and then liquidise the soup until smooth. Just before serving, reheat and taste, adding seasoning if necessary. Serve with the cream and the herbs.
